Introduction:
Chemically, traganth is a mixture of polysaccharides, i.e. polysaccharides, and esters. It is a plant sap obtained from the plant Astragalus gummifer and has a high water-binding capacity. As the production of tragacanth is complex and expensive, other vegetable thickeners are preferred.
Use/Preparation:
Traganth is used by the food industry as a thickener, gelling agent, stabiliser and filler. The substance is found in ice cream, desserts, baked goods (and their fillings), ready meals, sauces, soups and mayonnaise.
Health:
Traganth is considered to be harmless. However, the substance can cause allergic reactions and have a laxative effect.
