Sorbic acid (E 200)

Introduction:

Sorbic acid is a preservative approved for certain foods and cosmetics.

Use/Preparation:

As a preservative, sorbic acid inhibits the growth of yeasts and moulds as well as some bacteria. As its effect is developed in acidic and rather pH-neutral foods, it is mainly used in bakery products, cheese, fruit juices, wine, margarine, jams, jellies and dried fruits.

Health:

Sorbic acid is well tolerated by humans and poses no health risk. Nevertheless, there is an allergenic potential: in some people who suffer from neurodermatitis or are asthmatics, for example, sorbic acid can trigger pseudoallergies.
