Introduction:
In Germany, shark is most commonly marketed in the form of roach (belly flap) and conger eel (back piece). The spiny dogfish is classified as "critically endangered" on the Red List of Threatened Species.
Use/Preparation:
Shark is consumed as shark steak, shark fin soup or shill curls.
Health:
Dogfish provides nutrients such as vitamin A, B vitamins, iodine and omega-3 fatty acids. Yet it is at the bottom of the food chain. As a result, numerous pollutants accumulate in the shark's body. In particular, levels of mercury are sometimes so elevated that several meals of shark meat can lead to toxicologically relevant exposure in the body.
Alternatives:
Other omega-3 rich fish such as mackerel, herring, tuna or salmon.
