Lime (Citrus spec.)

Introduction:

The word lime means "small lemon". They look like small, round, green-yellow lemons, but are juicier and taste more aromatic and tart-sour.

Use/Preparation:

Limes are mainly used for cocktails. But limes add a pleasantly tart flavour to fruit salads, seafood, sauces, dressings, desserts, drinks, liqueurs, ice cream, sweet biscuits, icing and confectionery or savoury dishes.

Health:

Limes are full of minerals such as calcium, potassium, magnesium and sodium. They also contain vitamin E, C and vitamins of the B group.

Alternatives:

Lemons have slightly different flavours but, like the lime, bring a pleasant acidity and are rich in vitamin C. Green mandarins, also called satsumas, can replace limes with their firm, sweet and slightly acidic flesh. They are mostly available in Asian grocery shops.
