Introduction:
Aspergillus niger, also known as black mould or black watering can mould, belongs to the group of moulds (Aspergillus) that can cause intoxications or allergies. The fungus is found, among other things, in spoiled food, especially on fruit and vegetables. The fungus is also found on dried fruits, nuts, seeds and tea.
Use/Preparation:
In the food industry, Aspergillus produces enzymes for wine, for example, as well as citric acid (E330) for soft drinks, convenience foods and gummy bears.
Health:
Like Candida, Aspergillus also belongs to the pathogenic, i.e. disease-causing fungi, which can be a trigger for aspergillosis, food poisoning or allergies.
