Tannin

Introduction:

Tannins are plant tannins found especially in wine, tea (black, green), coffee, legumes, beer, cereals and berries. In plants, they act as natural defence substances against microbial pathogens and pest infestations.

Use/Preparation:

In the food industry, tannins are used as preservatives or flocculants.

Health:

Tannins can form complexes with digestive enzymes and proteins in the intestine, hindering the absorption of certain minerals, such as iron and calcium, and vitamins. But some positive effects are also known. For example, they are said to have anti-cancer properties, antiviral and antibacterial effects. Because of their antioxidant capacity, they are often used in food supplements.
