Introduction:
Mustard seeds are a popular seasoning from which mustard, among other things, is made. For this, the grains are ground and processed with water, vinegar, sugar and spices to make a paste. The pungency depends on the variety used and the spices added.
Use/Preparation:
The whole grains are found in sausages or canned vegetables. As a condiment, mustard is also used for fish, meat, in sauces, marinades and remoulades.
Health:
Mustard stimulates the appetite, aids digestion and makes fatty dishes more digestible. The mustard oils also have antibiotic, diaphoretic and anti-inflammatory effects and stimulate blood circulation. Studies have shown anticarcinogenic effects.
Alternatives:
Spiciness can also be achieved with pepper, chilli or horseradish.
