Bay leaf (Laurus nobilis)

Introduction:

The aromatic leaves of the true bay leaf are used fresh and dried as a seasoning herb. They have a tangy, spicy aroma.

Use/Preparation:

The leaves are particularly suitable for seasoning braised dishes, hearty vegetables, soups, or for refining a sweet custard - with fruit salad or apple strudel. As the aroma develops slowly, the herb should be cooked along and removed afterwards.

Health:

The healing properties of laurel are attributed to the essential oils it contains. Antibacterial, antimicrobiotic and antifungal effects have been proven. The scent is said to provide relaxation and promote concentration.

Alternatives:

Spices that can replace the spicy aroma in some dishes are thyme, oregano, basil, rosemary, marjoram or juniper berries.
