Introduction:
The leaves of the Lollo Rosso are strongly curled, hang together like rosettes and are green in the lower area and dark red at the tips. It tastes fresh and crunchy, slightly nutty and mild to tart.
Use/Preparation:
Lollo Rosso is usually prepared raw as a salad. The curly leaves are excellent for decorating canapés and cold platters.
Health:
Red leaf lettuce contains vitamins A and C as well as the minerals potassium and iron. The red leaf ends are full of anthocyanins, which have a protective effect on body cells and blood vessels.
Alternatives:
Rocket is a good alternative to lollo rosso because of its sharp and nutty flavour. Radicchio or chicory, which taste more bitter but just as crisp and tangy, are also suitable substitutes.
