Introduction:
Alfalfa, also called lucerne or eternal clover, belongs to the legume family. The alfalfa is a useful plant, bears purple flowers and the seeds appear yellow/brown. For humans, the sprouts grown from it are a real treat with their aromatic, mildly nutty taste.
Use/Preparation:
As sprouts, alfalfa can be enjoyed in salads, on bread or in cottage cheese.
Health:
The sprouts are rich in vegetable proteins, B vitamins, magnesium, iron, calcium and phosphorus. In addition, alfalfa is characterised by high amounts of antioxidants and chlorophyll, which have a preventive effect on health. The proportion of plant hormones (phytoestrogens) is said to benefit women with menopausal symptoms.
Alternatives:
As an alternative to alfalfa, other seeds such as amaranth, fenugreek seeds or broccoli seeds can easily be grown into sprouts yourself.
