Oysters (Ostreidae)

Introduction:

A fresh oyster smells like the sea when it is opened. You can recognise them because they are tightly closed. Opened oysters may already be dead, smell unpleasant and should not be eaten.

Use/Preparation:

Fresh oysters are "slurped" raw and enjoyed drizzled with lemon and a pinch of pepper to taste.

Health:

Although oysters consist of more than 80% water, they have a very high content of iron, vitamin A and B12, zinc, selenium and copper. Gout sufferers should enjoy them only in moderation because of their high purine content.

Alternatives:

Oysters can be replaced by other seafood such as mussels, squid, prawns or crabs.
