Mushroom (Agaricus bisporus)

Introduction:

The mushroom is a popular, tasty edible mushroom. It can be found in the wild all over Europe, but the mushrooms on sale are mostly cultivated mushrooms. The mushroom comes in different colours and sizes, including white, brown and pink.

Use/Preparation:

Mushrooms can be eaten raw, fried, baked or boiled. They are delicious in soups, sauces, casseroles, risotto, pizza, focaccia and pasta dishes.

Health:

Mushrooms contain various B vitamins, vitamin D and minerals such as potassium, iron and zinc and thus support heart health, digestion and the skin. The beta-glucans contained have a beneficial effect on cholesterol levels.

Alternatives:

All other mushrooms have similar nutrients. Aubergines come very close to the mushroom texture, but these should be dehydrated first.
