Introduction:
Endive is a real winter salad that even tolerates light frost well. Similar to chicory and radicchio, it tastes savoury and slightly bitter.
Use/Preparation:
The endive can be enjoyed raw as a salad or cooked, for example in soups and stews or as a steamed vegetable.
Health:
Due to its high fibre content and the bitter substance intybin, endive salad aids digestion. It also contains valuable ingredients such as vitamins A, B and C as well as potassium, phosphorus, calcium, iron and magnesium.
Alternatives:
All kinds of salads are suitable as an alternative. Chicory, radicchio and lamb's lettuce have a similar tart note.
